Ingredients

  • 1/4 tsp salt
  • 1 1/2 cups rolled oats
  • 1 cup Granny Smith apple, finely diced

Instructions

  1. Preheat your oven to 350F (175C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, cinnamon, baking soda, and salt.
  5. Slowly stir the dry ingredients into the wet ingredients until just combined.
  6. Fold in the rolled oats and diced apples by hand using a spatula.
  7. Chill the dough in the refrigerator for 30 minutes.
  8. Scoop rounded tablespoons of dough onto the baking sheet, spacing them 2 inches apart.
  9. Bake for 10-12 minutes or until the edges are golden brown.
  10. Let cool on the pan for 5 minutes before transferring to a wire rack.
