Ingredients
Scale
- 4 medium beets, peeled and diced
- 2 cups green cabbage, finely shredded
- 2 medium carrots, grated
- 2 medium Yukon Gold potatoes, diced (about 1 cup)
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1/4 cup fresh dill, chopped
- Juice of 1 lemon
- 6 cups low-sodium vegetable broth
Instructions
- 1. Prepare the vegetables: Wash and peel beets, carrots, and potatoes; shred cabbage; mince garlic; chop dill.
- 2. Sauté the base: Heat 1 tbsp olive oil in a large pot over medium heat. Add onion and sauté until translucent (about 5 minutes). Stir in garlic for an additional minute.

- 4. Pour in the broth: Add enough vegetable broth to cover the vegetables by about an inch. Bring to a boil; reduce heat and simmer uncovered for 30–40 minutes until tender.
