Ingredients
Scale
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 4 large eggs
- 1/2 cup unsweetened cocoa powder
- 1/4 cup brewed espresso or strong coffee
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup chopped nuts (optional)
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
- In a mixing bowl, beat together eggs and sugar until pale and fluffy. Gradually fold in flour, cocoa powder, and a pinch of salt until combined. Pour into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean.
- While the cake cools, prepare the filling by mixing mascarpone cheese with whipped heavy cream, sugar, and espresso until smooth.
- Slice the cooled sponge cake into two horizontal layers. Layer one piece at the bottom of a bowl lined with plastic wrap. Spread half of the mascarpone mixture over it, adding chopped nuts if desired.
- Top with the second layer of sponge cake followed by the remaining mascarpone mixture. Cover with plastic wrap and refrigerate for at least four hours or overnight for best results.
- When ready to serve, invert onto a plate, remove plastic wrap, dust with cocoa powder or garnish as desired.
