Ingredients

Scale
  • 2 medium sweet potatoes (about 400g)
  • 1 cup ricotta cheese (250g)
  • 1/2 cup grated Parmesan cheese (50g)
  • 1/4 tsp nutmeg
  • 2 cups all-purpose flour (250g)
  • 3 large eggs
  • 1 tbsp olive oil
  • 4 tbsp unsalted butter (60g)
  • 3 cloves garlic, minced
  • 1 cup low-sodium vegetable broth (240ml)

Instructions

  1. Preheat oven to 400°F (200°C). Clean and pierce sweet potatoes; roast for 45 minutes until tender. Once cool, scoop out flesh.
  2. In a bowl, combine sweet potato flesh, ricotta, Parmesan, and nutmeg. Season with salt and pepper; mash until smooth.
  3. In another bowl, mix flour, eggs, and olive oil; knead until smooth. Wrap the dough and let it rest for 30 minutes.
  4. Roll out the dough into thin sheets and cut squares about 3 inches wide. Place a spoonful of filling in each square, fold diagonally to seal.
  5. Boil salted water; cook caramelle for 3-4 minutes until they float. Drain carefully.
  6. In a skillet over medium heat, melt butter; sauté garlic until fragrant. Add broth and simmer for 5 minutes.
  7. Toss cooked caramelle in the sauce to coat evenly before serving.
