Description

A spooky twist on classic deviled eggs featuring a creamy yolk filling accented with fresh chives and paprika, styled to look like eyeballs.

Ingredients

Scale
  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon fresh chives, finely chopped
  • 1/2 teaspoon paprika
  • 6 black olive slices
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Place eggs in a pot and cover with cold water. Bring to a boil, then remove from heat, cover, and let sit for 12 minutes.
  2. Immediately transfer eggs to an ice bath for 5 minutes before peeling.
  3. Slice eggs in half lengthwise and remove the yolks into a bowl.
  4. Mash the yolks through a fine-mesh sieve until smooth.
  5. Stir in mayonnaise, Dijon mustard, apple cider vinegar, chopped chives, salt, and pepper until creamy.
  6. Pipe the filling into the egg white halves using a piping bag.
  7. Place one black olive slice in the center of each egg to create the pupil.
  8. Sprinkle a ring of paprika around the olive and add a tiny piece of chive for detail.
