Ingredients
Scale
- 1 lb ground beef or lamb
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1/2 cup bread crumbs
- 1/4 cup pine nuts (optional)
- 1/4 cup fresh parsley, chopped
- 1 tsp ground cumin
- 1 tsp paprika
- Salt and pepper to taste
- 1 cup water or broth (for cooking)
Instructions
- In a large bowl, combine ground beef or lamb with onion, garlic, bread crumbs, pine nuts (if using), parsley, cumin, paprika, salt, and pepper. Mix until just combined.
- Shape the mixture into small meatballs (about 1 inch in diameter) and place on a plate.
- Set your Instant Pot to 'Sauté' mode. Add olive oil and brown the meatballs for about 3-4 minutes on all sides.
- Remove meatballs and pour in water or broth to deglaze the pot. Return the meatballs to the pot.
- Close the lid securely and set to 'Manual' mode for 10 minutes at high pressure. Allow natural release for 5 minutes before quick-releasing any remaining pressure.
- If desired, remove meatballs after cooking and switch back to 'Sauté' mode to reduce excess liquid until thickened.
