Description

A vibrant, chunky salsa featuring the smoky sweetness of roasted red peppers and the bright acidity of lime and fresh tomatoes.

Ingredients

Scale
  • 4 Roma tomatoes, seeded and diced
  • 2 red bell peppers, roasted, peeled, and diced
  • 1/2 small white onion, finely diced
  • 1 jalapeño, seeded and finely diced
  • 1/2 cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon sea salt

Instructions

  1. Roast the red bell peppers under a broiler until skins are charred. Steam in a covered bowl for 10 minutes, then peel and dice.
  2. Dice the Roma tomatoes after removing the seeds and cores to prevent excess liquid.
  3. Finely chop the white onion and jalapeño.
  4. Combine the diced tomatoes, roasted peppers, onion, and jalapeño in a mixing bowl.
  5. Stir in the chopped cilantro and fresh lime juice.
  6. Season with sea salt and let the mixture rest for 20 minutes before serving.
