Description

A decadent fusion of garlic-butter seared shrimp and fluffy mashed potatoes, topped with a melted Parmesan crust.

Ingredients

Scale
  • 4 large Russet potatoes
  • 1 lb large shrimp, peeled and deveined
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp lemon juice
  • Salt and black pepper to taste
  • 1/4 tsp red pepper flakes

Instructions

  1. Preheat oven to 400°F. Scrub potatoes, prick with a fork, and bake for 60 minutes until tender.
  2. Slice potatoes lengthwise and scoop out the flesh, leaving a sturdy shell.
  3. Melt butter in a skillet over medium-high heat. Sear shrimp for 2 minutes per side until pink; remove from pan.
  4. In the same pan, sauté minced garlic and red pepper flakes for 30 seconds.
  5. Return shrimp to the pan and stir in the scooped potato flesh, lemon juice, and half the Parmesan.
  6. Spoon the mixture back into the potato shells and top with remaining Parmesan.
  7. Broil for 3-5 minutes until the cheese is golden brown and bubbly.
  8. Garnish with fresh parsley and serve immediately.
