- 1 lb Italian sausage, casings removed
- 1 cup dried brown lentils, rinsed
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups beef or vegetable broth
- 2 cups fresh baby spinach
- 1 tbsp olive oil
- 1 tbsp lemon juice or red wine vinegar
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it into crumbles.
- Add onion, carrots, and celery to the pot. Sauté for 5-7 minutes until softened.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Pour in the broth and add the rinsed lentils. Bring to a boil, then reduce heat to low.
- Cover and simmer for 30-40 minutes, or until lentils are tender but not falling apart.
- Stir in baby spinach and cook for 2 minutes until wilted.
- Remove from heat and stir in lemon juice or vinegar. Season with salt and pepper.
