Ingredients

  • 1 lb Italian sausage, casings removed
  • 1 cup dried brown lentils, rinsed
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups beef or vegetable broth
  • 2 cups fresh baby spinach
  • 1 tbsp olive oil
  • 1 tbsp lemon juice or red wine vinegar
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it into crumbles.
  2. Add onion, carrots, and celery to the pot. Sauté for 5-7 minutes until softened.
  3. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Pour in the broth and add the rinsed lentils. Bring to a boil, then reduce heat to low.
  5. Cover and simmer for 30-40 minutes, or until lentils are tender but not falling apart.
  6. Stir in baby spinach and cook for 2 minutes until wilted.
  7. Remove from heat and stir in lemon juice or vinegar. Season with salt and pepper.
