A gourmet, from-scratch version of the classic green bean casserole featuring fresh beans and a rich homemade mushroom cream sauce.

- 1.5 lbs fresh green beans, trimmed
- 4 tbsp unsalted butter
- 1/4 cup all-purpose flour
- 2 cups whole milk
- 8 oz cremini mushrooms, sliced
- 3 cloves garlic, minced
- 1 tbsp soy sauce
- 1 cup crispy fried onions
- Salt and black pepper to taste
Instructions
- Blanch green beans in boiling salted water for 3 minutes, then plunge into ice water and pat dry.
- Sauté mushrooms in butter over medium heat until golden brown.
- Whisk in flour and cook for 2 minutes to create a roux.
- Slowly stir in milk and soy sauce, whisking until the sauce thickens.
- Stir in minced garlic and the blanched green beans until well coated.
- Transfer mixture to a baking dish and top with fried onions.
- Bake at 350F for 25-30 minutes until bubbling and golden.
