Ingredients

Scale
  • 3 lb beef brisket
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup grated Parmesan cheese
  • 4 cups fresh baby spinach
  • 1 tsp black pepper
  • 1 tsp salt

Instructions

  1. Set the Instant Pot to the Sauté function and heat olive oil.
  2. Sear the beef brisket on all sides until browned, then remove from the pot.
  3. Add minced garlic to the remaining oil and sauté for 1 minute.
  4. Pour in beef broth and scrape the bottom of the pot to deglaze.
  5. Return the brisket to the pot, lock the lid, and set to High Pressure for 70 minutes.
  6. Allow a natural pressure release for 15 minutes, then vent remaining steam.
  7. Remove the brisket to a plate to rest.

  9. Stir in grated Parmesan cheese until melted and incorporated.
  10. Slice the brisket against the grain and spoon the spinach-Parmesan sauce over the meat.
