Ingredients

Scale
  • 4 lamb shanks (about 2–3 pounds total)
  • 3 medium carrots, chopped
  • 3 Yukon Gold potatoes, chopped
  • 2 yellow onions, diced
  • 4 garlic cloves, minced
  • 2 cups low-sodium beef broth
  • 1 cup dry red wine
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (160°C). Trim excess fat from the lamb shanks and season generously with salt and pepper. Chop the vegetables into even pieces.
  2. In a large Dutch oven, heat olive oil over medium-high heat. Sear the lamb shanks until browned on all sides (about 3-4 minutes per side). Remove from pot and set aside.
  3. In the same pot, sauté onions, garlic, carrots, and potatoes until softened (about 5-7 minutes).
  4. Deglaze the pot with red wine, simmering for about 5 minutes to reduce slightly.
  5. Return the lamb shanks to the pot, add beef broth until just covered, and toss in rosemary and thyme. Bring to a gentle simmer and cover.
  6. Transfer the covered pot to the oven and braise for approximately 2-3 hours until the meat is tender and falling off the bone.
