Ingredients
Scale
- 2 pounds beef tenderloin
- 8 oz cremini mushrooms, finely chopped
- 8 oz shiitake mushrooms, finely chopped
- 6 slices prosciutto
- 1 sheet puff pastry (thawed)
- 1 egg yolk (beaten with 1 tbsp water)
- 2 tsp fresh thyme, chopped
- 2 tsp fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Season beef tenderloin with salt and pepper. Sear in a hot skillet for 3-4 minutes on each side until browned. Let rest.
- In the same skillet, cook finely chopped mushrooms with garlic and herbs over medium heat for about 10 minutes until moisture evaporates. Cool slightly.
- Layer prosciutto on parchment paper, spread mushroom mixture on top, then place seared beef in the center. Roll tightly using parchment as a guide and refrigerate for at least 30 minutes.
- Roll out puff pastry on a floured surface to encase the beef. Wrap tightly and seal edges with egg wash.
- Place wrapped Wellington on a baking sheet lined with parchment paper; brush with egg wash. Bake for 25-30 minutes or until golden brown.
