Ingredients

Scale
  • 2 lbs beef chuck roast
  • 4 dried guajillo chiles
  • 1 medium onion, chopped
  • 4 garlic cloves
  • 1/4 cup fresh cilantro, chopped
  • 2 cups Mexican cheese blend (Oaxaca and Chihuahua)
  • 4 slices sourdough bread
  • 2 cups beef broth
  • Juice of 1 lime
  • 2 tbsp butter

Instructions

  1. Prepare the Birria: In a large pot, combine the beef chuck roast, guajillo chiles, onion, garlic, and enough water to cover. Bring to a boil, then reduce heat and simmer for about 2 hours until the meat is tender.
  2. Make the Broth: Remove beef and strain liquid. Blend half the strained broth with garlic and cilantro until smooth. Return to pot with shredded beef and simmer for another 20 minutes.
  3. Assemble Grilled Cheese: Preheat a skillet over medium heat. Butter one side of each sourdough slice. Place one slice butter-side down in the skillet; add shredded cheese followed by birria meat and top with another slice of cheese and second bread slice butter-side up.
  4. Cook Until Golden: Cook for about 4 minutes until golden brown, flip carefully using a spatula, press down gently while cooking on the other side until both are crispy and cheese is melted.
  5. Serve: Cut into halves or quarters and serve immediately with warmed birria broth for dipping.
