Scale
- 2 cups all-purpose flour
- 1.5 tsp baking powder
- 0.5 tsp salt
- 2 tsp ground cinnamon
- 1 tsp ground nutmeg
- 0.25 tsp ground cloves
- 1 cup brown sugar, packed
- 0.75 cup vegetable oil
- 3 large eggs, room temperature
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 0.33 cup eggnog
- 0.25 tsp ground nutmeg (for frosting)
Instructions
- Preheat your oven to 350°F (175°C) and grease two 8-inch round cake pans, lining the bottoms with parchment paper.
- In a medium bowl, whisk together flour, baking powder, salt, cinnamon, nutmeg, and cloves.
- In a large bowl, beat brown sugar and vegetable oil until combined. Add eggs one at a time, beating well after each.
- Slowly stir the dry ingredients into the wet ingredients until just combined. Do not overmix.
- Divide the batter evenly between the prepared pans and bake for 30-35 minutes, or until a toothpick comes out with a few moist crumbs.
- Cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- Beat softened butter until fluffy. Gradually add powdered sugar, then stir in eggnog and nutmeg. Whip on high for 3 minutes.
- Place one cake layer on a plate, frost the top, add the second layer, and cover the entire cake with the remaining buttercream.
