Ingredients
Scale
- 2 lbs bone-in chicken thighs (skin-on)
- 6 cloves garlic (whole or minced)
- 1 medium yellow onion (sliced)
- ½ cup low-sodium soy sauce
- ½ cup cane vinegar (or white vinegar)
- 2 bay leaves
- 1 tsp black peppercorns (crushed)
- 1 cup water
Instructions
- 1. Marinate the chicken: In a large bowl, mix soy sauce, vinegar, garlic, bay leaves, and peppercorns. Add chicken thighs and coat well. Cover and marinate for at least 1 hour or overnight.
- 2. Sauté aromatics: Heat oil in a pot over medium heat. Sauté sliced onions until translucent, then add minced garlic until fragrant.
- 3. Brown the chicken: Remove chicken from marinade (reserve marinade) and brown on all sides in the pot for about 5 minutes per side.
- 4. Simmer: Pour reserved marinade over the browned chicken and add water to cover halfway. Bring to a boil, reduce heat to low, cover, and simmer for 30-40 minutes until tender.
- 5. Thicken sauce: Uncover and simmer for an additional 10-15 minutes until the sauce thickens to your liking.
