Description
Festive orange bell peppers carved like Jack-o’-lanterns and filled with a savory mixture of ground beef, rice, and melted cheddar cheese, topped with black olive features.
Ingredients
Scale
- 4 large orange bell peppers
- 1 lb ground beef
- 2 cups cooked white rice
- 1 cup shredded sharp cheddar cheese
- 1/2 cup sliced black olives
- 1 small onion, diced
- 3 cloves garlic, minced
- 1/2 cup tomato sauce
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the tops off the orange bell peppers and remove seeds. Carefully carve triangular eyes and a jagged mouth into the sides using a paring knife.
- Heat olive oil in a large skillet over medium heat. Sauté diced onions until translucent, then add minced garlic and cook for 1 minute.
- Add ground beef to the skillet and cook until browned. Drain off any excess fat.
- Stir in the tomato sauce, cooked rice, salt, and black pepper. Simmer for 3-5 minutes until well combined.
- Spoon the filling into the carved peppers, leaving a small space at the top.
- Top each pepper with shredded cheddar cheese and place black olive slices on top to enhance the Jack-o'-lantern face.
- Place peppers in a baking dish and bake for 25-30 minutes, or until the peppers are tender and the cheese is bubbly.
