Description

Baba Ghanoush is a creamy and smoky Middle Eastern dip made from roasted eggplant, tahini, garlic, and lemon juice. This delightful dish is perfect for gatherings or as a healthy snack at home. Its smooth texture and robust flavors make it an irresistible accompaniment to fresh veggies or warm pita.

Ingredients

Scale
  • 1 medium eggplant (about 1 pound)
  • ¼ cup tahini
  • 2 tablespoons freshly squeezed lemon juice
  • 1–2 cloves garlic, minced (adjust to taste)
  • 2 tablespoons extra virgin olive oil (plus more for drizzling)
  • Salt to taste
  • Pomegranate seeds (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Prick the eggplant several times with a fork.
  2. Place the eggplant on a baking sheet and roast for 30-40 minutes until the skin is charred and the flesh is tender.
  3. Allow the eggplant to cool slightly, then scoop out the flesh into a mixing bowl.
  4. Add tahini, lemon juice, garlic, salt, and half of the olive oil to the bowl. Blend until smooth using an immersion blender or food processor.
  5. Taste and adjust seasoning with more salt or lemon juice if needed.
  6. Transfer to a serving bowl, drizzle with remaining olive oil, and garnish with pomegranate seeds if desired.
