Ingredients

Scale
  • 3–4 lbs pork shoulder
  • 4–6 cloves garlic, minced
  • 2 tsp dried thyme
  • 1 large onion, sliced
  • 2 cups low-sodium vegetable broth
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 2 tbsp Dijon mustard

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine olive oil, minced garlic, Dijon mustard, dried thyme, salt, and pepper.
  3. Rub the marinade all over the pork shoulder. Let it sit for at least one hour or refrigerate overnight.
  4. Place sliced onions at the bottom of a roasting pan and position the marinated pork on top.
  5. Pour vegetable broth around the pork without soaking it directly.
  6. Cover with foil and roast for about three hours or until the internal temperature reaches 190°F (88°C). Remove foil during the last 30 minutes to brown.
