Description

A streamlined one-pan dinner featuring savory beef or turkey meatballs roasted alongside a colorful medley of carrots, zucchini, and bell peppers.

Ingredients

Scale
  • 1 lb ground beef or ground turkey
  • 1/2 cup Panko breadcrumbs
  • 1 large egg
  • 3 cloves garlic, minced
  • 1/2 tsp dried oregano
  • 1/4 cup grated Parmesan cheese
  • 2 medium carrots, sliced into rounds
  • 1 medium zucchini, sliced into half-moons
  • 2 bell peppers (any color), chopped into 1-inch pieces
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat your oven to 400F (200C) and line a large baking sheet with parchment paper.
  2. In a large bowl, combine ground meat, breadcrumbs, egg, minced garlic, oregano, and Parmesan cheese. Mix gently until combined.
  3. Roll the meat mixture into 1-inch balls, ensuring they are uniform in size.
  4. In a separate bowl, toss carrots, zucchini, and bell peppers with olive oil, salt, and pepper.
  5. Arrange the meatballs and vegetables on the baking sheet, leaving space between them for air circulation.
  6. Bake for 20 to 25 minutes, or until meatballs reach an internal temperature of 160F (beef) or 165F (turkey).
  7. Remove from the oven and let rest for 5 minutes before serving.
