Description

A faster, more consistent way to roast turkey by flattening the bird and finishing it with a tart, zesty cranberry orange glaze.

Ingredients

Scale
  • 12–14 lb whole turkey
  • 1/2 cup unsalted butter, softened
  • 4 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 2 tbsp kosher salt
  • 1 tsp black pepper
  • 12 oz fresh cranberries
  • 1 cup orange juice
  • 1 tbsp orange zest
  • 1/3 cup honey or maple syrup

Instructions

  1. Preheat your oven to 425°F (218°C).
  2. Remove the turkey's backbone using kitchen shears and press the breastbone down firmly until the bird lies flat.
  3. Mix softened butter with minced garlic, rosemary, and thyme. Rub this mixture under the skin of the breasts and thighs.
  4. Pat the skin dry with paper towels and season generously with salt and pepper.
  5. Place the turkey on a wire rack set over a rimmed baking sheet and roast for approximately 60-80 minutes.
  6. While roasting, simmer cranberries, orange juice, zest, and honey in a saucepan over medium heat until berries burst and the mixture thickens.
  7. When the turkey reaches an internal temperature of 150°F, remove it from the oven and brush the cranberry orange glaze over the skin.
  8. Return to the oven and roast until the internal temperature reaches 165°F in the thickest part of the breast.
  9. Transfer the turkey to a board and let it rest for 20 minutes before carving.
