Description

A rich, dark chocolate beverage infused with the earthy, aromatic notes of fresh sage and thyme for a sophisticated, botanical twist on classic hot cocoa.

Ingredients

Scale
  • 2 cups whole milk
  • 4 oz high-quality dark chocolate (70% cocoa), finely chopped
  • 4 fresh sage leaves
  • 3 sprigs of fresh thyme
  • 2 tablespoons maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon sea salt

Instructions

  1. Combine the whole milk, fresh sage leaves, and thyme sprigs in a small saucepan over medium-low heat.
  2. Heat the mixture until it just begins to simmer, then remove the pan from the heat immediately.
  3. Let the herbs steep in the milk for 5 minutes to extract the aromatic oils.
  4. Strain the milk through a fine-mesh sieve into a clean bowl or keep it in the pot after removing the herbs.
  5. Return the infused milk to low heat and whisk in the chopped dark chocolate until completely melted and smooth.
  6. Stir in the maple syrup, vanilla extract, and sea salt until well combined.
  7. Heat for one final minute on low, then pour into pre-warmed mugs.
