Ingredients

  • 1/2 cup refined coconut oil, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/4 cup almond milk
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups powdered sugar
  • 23 tbsp almond milk (for frosting)
  • Vegan food coloring (purple, green, orange)

Instructions

  1. Preheat oven to 350F (175C) and line a baking sheet with parchment paper.
  2. Cream together softened coconut oil, granulated sugar, and brown sugar until fluffy.
  3. Stir in almond milk and vanilla extract until smooth.
  4. In a separate bowl, whisk flour, baking soda, and salt.
  5. Fold the dry ingredients into the wet ingredients until just combined.
  6. Refrigerate the dough for 30 minutes.
  7. Scoop tablespoon-sized balls of dough and place 2 inches apart on the sheet.
  8. Bake for 10-12 minutes until edges are lightly golden.
  9. Cool on the pan for 5 minutes, then move to a wire rack to cool completely.
  10. Mix powdered sugar, almond milk, and food coloring to create frosting.
  11. Pipe frosting onto cooled cookies and decorate with spooky faces.
