Ingredients
Scale
- 1 1/2 – 2 lbs flank steak
- 2 tbsp olive oil
- 2 tsp ancho chili powder
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp kosher salt
- ½ tsp freshly ground black pepper
Instructions
- Pat the flank steak dry with paper towels and season generously with salt and pepper.
- In a small bowl, mix ancho chili powder, smoked paprika, garlic powder, salt, and black pepper to create the dry rub.
- Coat the steak evenly with the rub, pressing it into the meat for a 1-minute crust.
- Preheat your grill or grill pan to high heat (450-500°F). Brush the grill grates with a little olive oil.
- Sear the steak for 2-3 minutes per side until a charcoal crust forms.
- Reduce temperature to medium and grill to desired doneness—about 5-6 minutes for medium-rare (130-135°F internal).
- Let the steak rest 8-10 minutes to retain its juices.
- Slice against the grain and serve with your favorite sides.
