Ingredients

Scale
  • 1 cup dried chickpeas (soaked overnight)
  • 1/2 cup fresh parsley (packed)
  • 2 garlic cloves (minced)
  • 1 tsp cumin seeds (lightly toasted)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup tahini paste
  • 2 tbsp lemon juice
  • Water (as needed for tahini sauce)
  • Oil for frying (or cooking spray for baking)
  • 4 pita breads (whole wheat or traditional)
  • 1 cup sliced cucumbers
  • 1 cup diced tomatoes

Instructions

  1. Soak chickpeas overnight in water. Drain before use.
  2. In a food processor, combine soaked chickpeas, parsley, garlic, cumin, salt, and pepper. Pulse until you achieve a coarse texture.
  3. Shape the mixture into small balls or patties.
  4. Heat oil in a pan over medium heat and fry falafel until golden brown on all sides (about 3 minutes each). Alternatively, bake at 400°F (200°C) for 20-25 minutes.
  5. For the tahini sauce, whisk together tahini, lemon juice, and enough water until smooth.
  6. Serve falafel in pita bread with sliced cucumbers and tomatoes, drizzled with tahini sauce.
