Ingredients

Scale
  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1 bottle (12 oz) Guinness beer (extra stout recommended)
  • 4 medium carrots, diced
  • 4 medium potatoes, peeled and cubed
  • 2 medium yellow onions, diced
  • 4 cloves garlic, minced
  • 1 bouquet garni (thyme and bay leaves)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 3 cups beef stock

Instructions

  1. Prepare ingredients by chopping beef and dicing vegetables.
  2. In a large pot over medium-high heat, add olive oil. Brown the beef in batches for about 5-7 minutes until crusted. Remove from pot.
  3. Sauté onions in the same pot until translucent (about 3-4 minutes). Add garlic and cook for an additional minute.
  4. Return beef to the pot along with carrots and potatoes. Pour in Guinness beer and enough beef stock to cover ingredients. Stir well.
  5. Add the bouquet garni and season with salt and pepper. Bring to a simmer.
  6. Cover tightly with a lid, reduce heat to low, and let simmer for 1.5 to 2 hours until meat is tender. Adjust seasoning as necessary before serving.
